Authenticity analysis of high quality edible oils

NEW: Focus on pumpkin seed oil

Whether as a culinary perennial favorite or a young food trend - especially in cold cuisine, high-quality edible oils are enjoying growing popularity. The specialties are suitable for refining many dishes due to their special aroma. In addition to taste, health-relevant ingredients such as vitamins, omega-3 fatty acids and antioxidants are also among the selling points.

Unfortunately, however, some oils, such as olive and pumpkin seed oil, have repeatedly hit the headlines in the past because their authenticity (correct indication of origin) is doubted or there is suspicion of admixtures of cheaper cooking oils such as rapeseed, soybean and sunflower oil.

Our NMR competence center in Bayreuth, which has acquired enormous expertise in the authenticity analysis of various foodstuffs over the years, has now intensively dealt with the analysis of pumpkin seed oils.

Die NMR-Technology (nuclear magnetic resonance spectroscopy) has long been used in the authenticity analysis of fruit juice, honey, wine and edible oil, as Stefan Bindereif, responsible for edible oil analysis at the Competence Center, notes. It was therefore obvious to use NMR technology, with all its advantages, also for special oils, such as pumpkin seed oil, and to develop an analysis that can determine the most relevant parameters quickly and reproducibly. Of course, a statement on authenticity or admixtures is also possible.

By means of NMR technology a metabolic fingerprint of the pumpkin seed oil sample is measured, which gives an overview of the different ingredients.

The advantage over other methods: with a single measurement, numerous other quality parameters of the sample are determined, for which additional time-consuming and cost-intensive analyses would normally be necessary.

As a result of NMR analysis, important and relevant quality parameters are thus determined, statements on authenticity are determined, and together they are clearly presented in the test report.

The profiling analyses provide very comprehensive test results and are ideally suited for an initial quality and authenticity determination.

If there are indications of an overlap with vegetable oils, special marker substances can even be used to narrow down the type of oil used for admixture (currently rapeseed, soybean and sunflower oil).
