NMR analysis:

New method for determining the authenticity, origin and many other quality parameters in honey.

Using NMR (Nuclear Magnetic Resonance) honey samples can now be analyzed, too. The sample is hereby placed in a magnetic field and the magnetic interactions of all the constituents of the sample are measured, recorded, and displayed with the aid of a spectrum. The spectra obtained in this way are stored and archived in a database specifically created for honey and can then be analyzed using statistical models.

Within the framework of a cooperation with the company Alnumed GmbH, Bayreuth succeeded to establish this new procedure in order to recognize the authenticity, the origin and various distortions. In addition, it is also possible to determine quality parameters such as water, HMF, conductivity, diastase activity or fructose and glucose in one step in order to get a first overview of these important, honey-relevant parameters.

FoodQS GmbH and Alnumed GmbH have built up this database together and are now offering this analysis for interested customers
